Zucchini Hash

Since I have Zucchini growing in my garden this year I have been looking for different ways to cook it. Here's what I came up with-

1 Medium Zucchini diced
1 Medium Green Pepper diced
1 Medium Onion diced

Saute over medium heat until vegetables are soft but not mushy. Serve while still hot.

Use whatever you like to saute the vegetables-butter, olive oil, coconut oil, bacon grease, etc.  You can start with 1 Tablespoon and then add more if needed. You may need 2 tablespoons for this amount of vegetables. 
This can be served with eggs for breakfast or as a side dish for dinner. 

The onion was purchased from the store but the green pepper and zucchini came from my garden.

Garden Fresh Produce

This is the first year I have grown Zucchini & Green Peppers with success.  I'm so excited to have fresh Zucchini because I like to make Zucchini Bread.  I haven't decided what to do with the Green Peppers yet since I've only picked one so far.  Green Peppers get put on pizza, in eggs and stuffed (if there ripe at the same time) at my house.  If you haven't tried growing your own food I encourage you too!! Even if you only have a small patio start with a tomato plant or whatever you like.  It's not only cost effective but can be calming too. It's great to have your own fresh produce!  Happy Gardening!!
