Chicken Casserole

I love cookbooks and have LOTS of them so when I need some inspiration I look through them to find a recipe to use.  Yesterday was one of those days where I needed a fast & easy dinner so I was thinking using the crock-pot would be the way to go.  Well needless to say I waited too long and didn't use the crock-pot because of the time factor (not enough time to make the original recipe I found).  
I needed to make dinner within about 2 hours so I adapted the original recipe to bake in the oven in 1 hour. Here is what I did to make this recipe which you could call Deluxe Chicken Casserole. I used what I had on hand in my pantry and refrigerator (to use up some leftover chicken).

1 can (10 3/4 ounces) condensed cream of chicken soup.
1 container (6 ounce) plain Greek yogurt.
2 tablespoons dehydrated onions (that I chopped & dried).
5 tablespoons melted butter.
1 can (14 1/2 ounces) cut green beans, drained. 
1 1/4 cups shredded Mexican blend cheese.
1 box (6 ounce) Turkey stuffing mix.
3/4 cup leftover chicken breast chopped.

1. Combine soup, yogurt, 2 tablespoons butter, shredded cheese and chicken.  

2. Pour chicken mixture in a glass casserole dish. Sprinkle stuffing mix over chicken mixture; drizzle with remaining butter.

3. Bake uncovered at 350 degrees for 1 hour. *

*If stuffing starts to brown to quickly cover with foil and continue to bake for the remaining time.  

This recipe was approved by my teenage son, he liked the crunch of the stuffing on the top (and so did I).  He had no idea that I used yogurt instead of sour cream or that I used leftover chicken. I also eliminated the salt from the original recipe. You can use more or less cheese to suit your taste. Here is the break down of what this recipe cost me.

Canned Soup-$1.00 (Store brand, on sale)
Yogurt-$0.50  (Store brand, on sale)
Onions-Free (From friends garden)
Butter-$0.50 (Store brand, on sale)
Cheese-$2.50 (Store brand, on sale)
Stuffing mix-$1.00 (Name brand, on sale)
Chicken-Free (Leftover smoked chicken breast)

Total Cost $5.50

Cost per serving- (6 to 8 servings) $0.70

Obviously this would cost more if you bought the onions and chicken to use, just be sure to shop your own cupboards and pantry first to see what you have on hand.  Planning out meals, buying items in bulk, buying in season, on sale and using coupons when possible helps a lot to keep the cost of meals down.  I didn't include the tax when figuring the costs of the items for this recipe. 

Add a salad and some fruit to make it more of a balanced meal. 

This recipe is totally adaptable to your likes.  I hope you enjoy the recipe.
