Since my first try making raw sauerkraut was a success I thought I would try another way to make it. Instead of buying a head a head of cabbage I decided to buy 2 bags of coleslaw mix. The mix is shredded green cabbage, purple cabbage and carrots. The results were disappointing...... First the color was purple from the purple cabbage which I expected. Second the flavor was terrible.....Yuck!! It fermented but not in a good way. I ended up throwing all of it in my compost. I wonder if organic would have been a better option. Don't waste your time or money on a mix for raw sauerkraut. Buy a head of cabbage and shred it yourself. I will definitely make raw sauerkraut again just not with a mix EVER again. :)
